Load up your appetizer platter this holiday season with colorful veggie sticks to go. Friends can continue their conversations without crowding the kitchen or buffet table. I make the hummus a day ahead, or pick it up on your grocery run. Arrange a fun combination of crispy vegetables to fill the little serving cups.

Ingredients
- 24 disposable serving cups (5.5-ounce size)
- 10-ounce container of hummus or prepare from the hummus recipe link above
- 3 carrots, peeled, quartered and cut into 4 inch lengths
- 3 ribs of celery, peeled quartered and cut into 4 inch lengths
- red bell pepper, sliced into 4 inch sticks
- 24 green beans, blanched
- jicama, peeled and sliced into ½ inch sticks

Prepare the hummus

Assemble the veggie cups on a tray

Spoon 2 tablespoons of hummus into the bottom of each cup

Divide the vegetable sticks evenly amongst the cups
