I was shopping for trail mix in the bulk section of the grocery store and realized I could do better. Similar to making granola, the do-it-yourself variety tastes fresher and saves you money. You can choose any combination of nuts and dried fruit to suit your fancy. Season or go naked, a pouch of this made-with-love trail mix will quicken your step on the trail, or energize you for the work ahead. Package it in a cellophane bag for a pretty hostess gift.
Preheat oven to 250° and line a rimmed baking sheet with parchment paper. In large bowl, combine the apricots, raisins, cranberries, walnuts, cashews, sunflower kernels and pepitas. In a small bowl combine brown sugar, cinnamon, ginger, paprika and salt. Pour maple syrup over dried fruit and nuts to coat. Sprinkle spices and brown sugar into bowl and stir to coat. Spread into prepared pan. Bake at 250° for 1 hour, stirring every 15 minutes. Cool completely. Store in an airtight container. sweet + salty trail mix
