Pears, blue cheese, prosciutto and arugula— four simple ingredients for an appetizer you can prepare hours ahead of time. These are beautiful and as tasty as the look.  Appetizers are often an afterthought when I’m planning a party. I’m trying to collect a small repertoire of ideas that use ingredients I usually have on hand. I keep prosciutto in my freezer. I look for a blue cheese that is firm and fairly mild. It would be interesting to use several varieties of pears as a tasting. Have fun with this.

Serves: 8 Cooking Time: 1/2 hour


  • 2 pears, cut into 16 wedges
  • 2 teaspoons fresh lemon juice
  • 1 cup arugula
  • 4 ounces blue cheese, cut into small pieces
  • 6 ounces thinly sliced prosciutto, cut in half lengthwise



In a large bowl, toss the sliced pears and lemon juice.


Layer a slice of pear, an arugula leaf, and a piece of cheese on a piece of prosciutto and roll up.
