Pears, blue cheese, prosciutto, and arugula—four simple ingredients for an appetizer you can prepare hours ahead of time. I’ve been curating a small repertoire of core appetizers that use ingredients I usually have on hand, and this recipe meets all my requirements: visual appeal and delectable flavors, plus it’s easy to assemble at the last minute if necessary. Cut the pears in half and core them. Slice each half into eight wedges. Drizzle the pear slices with lemon juice to prevent them from browning.
