Pears, blue cheese, prosciutto, and arugula—four simple ingredients for an appetizer you can prepare hours ahead of time. I’ve been curating a small repertoire of core appetizers that use ingredients I usually have on hand, and this recipe meets all my requirements: visual appeal and delectable flavors, plus it’s easy to assemble at the last minute if necessary. This recipe was published in the January 2008 issue of Real Simple magazine.

Ingredients

  • 2 pears, skins on
  • 1 tablespoon fresh lemon juice
  • 1 cup arugula leaves
  • 4 ounces blue cheese, sliced
  • 6 ounces thinly sliced prosciutto, cut in halves lengthwise

Instructions

Cut the pears in half and core them. Slice each half into eight wedges. Drizzle the pear slices with lemon juice to prevent them from browning.

Put a slice of pear, an arugula leaf, and a piece of cheese on top of a piece of prosciutto, and roll it up. Press the prosciutto together to hold the roll in place.
