no-bake cookies

I remember making these no-bake cookies as a young girl. I liked the fact that all ingredients were assembled in the same pan. These cookies have popped up in a number of local espresso stands recently and are still a satisfying afternoon treat.

Serves: Makes 2 1/2 dozen Cooking Time: 30 minutes


  • ½ cup unsalted butter
  • 2 cups granulated sugar
  • ½ cup powdered cocoa
  • ½ teaspoon sea salt
  • ½ cup whole milk
  • 2 teaspoons vanilla
  • ½ cup crunchy peanut butter
  • 3 cups oatmeal



In medium sauce pan melt the butter over medium heat. Stir in the sugar, cocoa, salt and milk. Bring to a boil and cook for one minute.


Remove from heat and stir in peanut butter. Add oatmeal and vanilla and mix well.


Drop by spoonful onto parchment paper and allow to cool until firm, about 30 minutes.


Keep in an airtight container in the refrigerator up to two weeks.

    I have made the no-bake cookies before and they never seem to set. What am I doing wrong?

      Patti, I usually have the opposite problem, if I heat the sugar, butter, cocoa and milk mixture too long,the cookies are a little too dry, so I’d try melting the butter, sugar, cocoa and milk. Bring to a boil and let boil at least a minute to dissolve the sugar, then cool before adding the rest of the ingredients.
