oatmeal bars

Who doesn’t love oatmeal bars filled with jam for breakfast, lunch or an afternoon snack? I might need to establish a teatime tradition just to have an excuse to enjoy chewy nutty treats. The walnuts and cinnamon add to the wholesome flavor of this very easy to make dessert. I slice up the pan of cooled bars and pack them into a container to head out on the road, trail or water.

Serves: Makes 24 bars Cooking Time: 30 minutes

Ingredients

  • 1½ cups oatmeal
  • 1¾ cups flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup walnut pieces
  • 1 cup brown sugar, lightly packed
  • 1 teaspoon cinnamon
  • 1 cup butter, melted
  • 1½ cups berry jam

Instructions

Preheat oven to 325°. Grease a 9" x 9" square pan.

Mix oatmeal, flour, baking soda, salt, walnuts, brown sugar, cinnamon and butter.

Spread ½ the mixture on bottom of prepared baking pan.

Spread with raspberry jam. Crumble the remaining oatmeal mixture over top of jam.

Bake for 35-40 minutes or until the top looks evenly browned.

    Carol, can’t wait to make these with our homemade strawberry jam. I’ll have my walking friends over for tea and delicious oatmeal bars.
