Imagine an early afternoon swim in the Mediterranean Sea and then sitting down to a pasta salad loaded with fresh shrimp and Italian tuna. You might enjoy a glass of Prosecco with this casual meal. The crew of Fortuna generously shared their recipe with me during a visit to the Balearic Islands in Spain. When I spy a can of imported Spanish or Italian tuna packed in oil in the grocery store, I am inspired to make this dish.

Cooking Time: 45 minutes

Ingredients

  • 1 (16 ounce) package rotini pasta
  • 1 cup cherry tomatoes, sliced in half
  • 1 cup kalamata olives, sliced in half
  • 1 cup green olives, sliced in half
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • ½ pound shrimp, cooked
  • 2 (5.4 ounce) cans albacore tuna, drained
  • dressing:
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Instructions

Cook pasta according to instructions on the package. Drain and place pasta in large salad bowl.

Toss the prepared vegetables into the pasta.

Top with shrimp and tuna.

Whisk together salad dressing ingredients and pour over the salad. Gently toss together.

Serve chilled or at room temperature.
