Isn’t is much more fun to say crudités tray than raw vegetables served with dip in a bowl? If you are going for crudités, you might as well make it something spectacular. Treat yourself to a shopping spree at the local farmers market. Think of your platter as a canvas that you get to paint with nature’s bounty. You might want to blanch some of your green veggies to bring out the vibrancy of their color and soften their bite. Take a few minutes to pickle a beet or radish in a bath of vinegar. When you whip up a tasty dipping sauce like a green goddess, you can incorporate even more fresh vegetables onto the tray.
In the bowl of a mini food processor or blender, place all ingredients. Blend until smooth. Taste to adjust seasoning if necessary.
