farmers market crudités tray

Isn’t is much more fun to say crudités tray than raw vegetables served with dip in a bowl? If you are going for crudités, you might as well make it something spectacular. Treat yourself to a shopping spree at the local farmers market. Think of your platter as a canvas that you get to paint with nature’s bounty. You might want to blanch some of your green veggies to bring out the vibrancy of their color and soften their bite. Take a few minutes to pickle a beet or radish in a bath of vinegar. When you whip up a tasty dipping sauce like a green goddess, you can incorporate even more fresh vegetables onto the tray.

Serves: 1 cup

Ingredients

  • ⅓ cup mayonnaise or greek yogurt
  • ⅓ cup sour cream
  • ½ cup coarsely chopped parsley
  • 1 clove garlic, crushed
  • 2 tablespoons tarragon
  • 2 tablespoons chopped green onions or chives
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

In the bowl of a mini food processor or blender, place all ingredients.

Blend until smooth. Taste to adjust seasoning if necessary.

    Veggies yay. We all need to eat more of those colorful and tasty critters. I love your analogy of a palette. Good idea to consider blanching as some veggies are tastier that way.
