The cranberry gin fizz is a festive cocktail to serve to your guests as they arrive for a holiday celebration. It can be prepared ahead in batches so you can easily add a splash of sparking wine and top with the garnish just as friends are arriving at your door. Set the tone for the evening ahead with this inviting starter.
Prepare simple syrup: in small saucepan combine cranberry juice, lemon juice and sugar. Heat on medium heat and bring to a boil, stirring to dissolve sugar. Cool and transfer to a jar and refrigerate until cold. Prepare garnish by stripping 3” long rosemary twigs, leaving ¾” rosemary needles at the top. Thread cranberries onto stripped section of the twigs. Set aside. Combine gin and cranberry lemon simple syrup in a large pitcher, chill until cold. Just before serving, add ice to flutes or other festive glasses to fill about half way. Pour cranberry mixture into glasses about half way and top with sparkling wine.
