If you need indulge your urge for chocolate, (you chocolate lovers know what I mean) these decadent little servings of fudgy chocolate pots are just the ticket. They take under five minutes to prepare, but hold your horses; they will need to chill for several hours to attain their silky rich texture.
Set out 4 small glasses, espresso cups or six shot glasses to hold the chocolate once prepared. Break the chocolate up into a medium bowl, then melt in the microwave in 30-second spurts or melt the chocolate in a bowl over a saucepan of simmering water making sure the bowl doesn’t touch the water. Add the hot water tablespoon by tablespoon, stirring until you have a smooth paste. The chocolate will go stiff and grainy when you first start pouring the hot water in, but don’t panic, just keep stirring and adding a little at a time until the mixture becomes smooth again. It will be the consistency of pudding when you are ready to add the cream. Whisk in the cream and vanilla. Pour into glasses and let set in the fridge for several hours. Just before serving, top each dessert with a dollop of whipped cream and a bit of grated chocolate.chocolate pots
