chocolate mint mousse

I knew special company was coming for dinner when my mother prepared her chocolate mint mousse dessert. The servings are relatively small, very rich, and easy to prepare with no baking necessary. I use the Nabisco Nilla Vanilla brand of wafers in honor of the original recipe.

Serves: Makes 12 individual serving

Ingredients

  • ½ (11 ounce) box vanilla wafers, crushed
  • 1¼ cups butter divided (¼ cup melted for the wafer crust)
  • 2 cups powdered sugar
  • 4 (1 ounce) squares cooking chocolate, melted
  • 4 unbeaten eggs
  • 1 teaspoon peppermint extract
  • 2 teaspoons vanilla extract

Instructions

Crush wafers in food processor or in a bag, smash with a rolling pin.

Mix in melted butter and spoon half into the bottoms of each paper muffin tin. Reserve the 2nd half for the topping.

Melt chocolate and cool slightly.

Cream butter and sugar.

Add eggs one at a time to the creamed butter and sugar and mix well.

Mix in melted chocolate.

Add peppermint and vanilla extract and beat.

Spoon filling into muffin tins, dividing evenly into the 12 cups.

Sprinkle the remainder of crushed vanilla wafers on top of each dessert.

Serve chilled.
