The sun may be setting a little earlier this month, but there is still plenty of time to plan a picnic dinner to enjoy at the beach or maybe perched on a bluff with a view. I make chicken skewers + peanut dipping sauce a day in advance and then I only need to slice some fruit or assemble a pea salad to complete the meal. The peanut sauce is so flavorful you might want to make extra to dress-up asian noodles or slather inside some vietnamese spring rolls.
In a large bowl combine the cubed chicken, olive oil, thyme and salt. Marinate overnight. Soak skewers in water for 20 minutes. Thread 4-5 cubes of chicken on each skewer. Heat the barbecue grill on medium for 10 minutes. Cook skewers until firm, about 4 minutes per side. Prepare the dipping sauce by combining all ingredients except the water. Whisk until smooth.
