chicken sausage & greens polenta

When I’m thinking about comfort food, chicken sausage and greens over polenta is often at the top of my list. A warm bowl of creamy polenta and spicy sausage mingled in wilted greens takes me to my rainy day happy place. I love this one-dish meal so much, I’ll serve it when friends come to visit so I don’t have to spent too much time in the kitchen.

Ingredients

  • 3 cups chicken broth
  • 2 cups milk
  • 1 cup polenta (cornmeal)
  • ½ teaspoon olive oil
  • 1 (14 ounce) package hot chicken sausages, casings discarded
  • 2 cloves garlic, peeled and chopped
  • ¼ teaspoon hot chili flakes
  • 1 large bunch swiss chard, washed and cut into bite-sized pieces
  • ½ cup shaved parmesan cheese
  • salt and pepper

Instructions

In a medium sauce pan, mix broth, milk and polenta. Stir over high heat until boiling; reduce heat to low and stir often until polenta is smooth to taste, 12 to 15 minutes. If polenta is thicker than desired, stir in 2 to 4 tablespoons water.

Meanwhile, pour oil into a large nonstick pan over medium-high heat. When oil is hot, add sausages and break apart with a spoon. Add garlic and chili flakes; stir until meat is browned and crumbled, about 4 minutes. Add greens and stir until wilted, about 2 minutes.

Spoon polenta equally into 4 bowls. Divide sausage and greens mixture equally over the top of the bowls of polenta.

Notes

Prawns bathed in fire-roasted tomatoes makes another great combination to spoon over a bowl polenta—shrimp and grits.
