Crunchy, tangy, messy and delicious all rolled into each bite. That’s my definition of a chicken lettuce wrap. Put some fun into your next meal with this preparation that’s a snap to make. The key ingredient here is Hoisin sauce, sometimes referred to as Chinese barbecue sauce. You could serve this along with some asian plum sauce for dipping.
Combine all hoisin sauce ingredients in a salad dressing shaker or jar with a lid. Shake until smooth. Set aside. Prepare the lettuce by carefully separating the leaves and drenching them in a bowl of ice water. Dry the leaves in a salad spinner or shake off the water, wrap the leaves in a dry dish towel and shake it vigorously. Set aside. Heat a large skillet to medium-high. Add the ground chicken and season it with salt and pepper. Break the chicken into small pieces with a spatula as it browns, about 4 minutes. Drain the excess fat. Add the yellow onions and cook for 2 minutes or until the onions be come fragrant. Add the hoisin sauce, water chestnuts and green onions. Cook for an additional 2 minutes.
