Chicken Caesar wraps are like a Caesar salad you can hold in your hand. They are filled with chunks of chicken bathed in tangy Caesar dressing alongside crunchy romaine lettuce. Easy to make ahead and easy to manage in any kind of weather.

Ingredients

  • 8 wraps, 8-9" burrito size
  • 3 cups rotisserie chicken, shredded
  • ½ cup Parmesan cheese, shredded
  • ½ head romaine lettuce, shredded
  • caesar dressing:
  • 1 cup mayonnaise
  • 2 tablespoons white wine vinegar
  • 2 tablespoons Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoons Worcestershire sauce
  • 1 tablespoon lemon juice
  • ¼ cup olive oil

Whisk all ingredients except the olive oil in a medium size bowl.

Slowly drizzle ¼ cup olive oil into mixture while continuing to whisk until it emulsifies and the mixture becomes creamy.

In medium bowl mix chicken, cheese and ½ cup dressing.

Spread remaining dressing over open wraps.

Lay a handful of lettuce on wrap across the center. Spoon chicken mixture over lettuce, dividing into 8 portions.

Pull 1/3 wrap over filling and tuck sides in to enclose the filling. Roll up to hold the wrap together.

Roll wraps in parchment paper or foil to keep fresh if preparing ahead.

Notes

If you want to add some more crunch, mix slivered almonds or chopped celery into the chicken.
