We discovered this simple pickled blackberry recipe while onboard this summer. It was a fun challenge to discover ways to use the sweet and salty berries. The winners were this appetizer with creamy brie and a salad dressing that compliments greens and fruit.
pickled blackberries: In a container with a lid, add vinegar, fish sauce, water and sugar. Mix until the sugar is dissolved. Add berries to brine mixture, seal the container and chill at least 4 hours. They can be used for up to a month. blackberries + brie appetizers: Lay out a dozen whole wheat crackers. Lay a slice of brie on each cracker Place one pickled blackberry on the brie, and a slice of apricot along side. Garnish with a sprig of thyme. berry vinaigrette:
¼ cup pickled blackberry brine, ½ cup olive oil, 1 teaspoon Dijon mustard, 1 clove garlic, minced, ½ teaspoon salt, ½ teaspoon pepper.Use berry vinaigrette over greens with sliced apples, pears or berries.blackberries + brie appetizer
