I can’t decide if avocado toast is better for breakfast or lunch. For a quick and easy-to-prepare meal, avocado toast has staying power. Besides, it’s wholesome and delicious. Avocados provide a beautiful and neutral-flavored backdrop for many other ingredients, so the possibilities are endless—open your refrigerator and get creative! I keep a loaf of artisan bread in my freezer already sliced for avocado toast mornings.
Toast a thick slice of bread. Arrange avocado slices to cover the toast. Mash down with a fork to hold avocado slices in place. Lay tomatoes and bacon over avocado. Drizzle tahini over the tomatoes. Sprinkle goat cheese crumbles over the top. Serve with tomato soup for lunch. Bring a fresh loaf of crusty bread home and slice it. Slide it back into the paper bag and put it in your freezer. In the morning you can pull out one slice and toast it on the frozen setting. avocado toast
