Aperol Spritz is an Italian aperitif that is light on alcohol, with just the right combo of bubbly and bitter. We first encountered this unfussy cocktail when cycling in Italy—it was offered at our hotel bar and was the hands-down favorite way to celebrate the end of a hot day. Aperol has a flavor profile similar to Campari, with its essences of bitter orange, rhubarb, and the herb gentian. Its beautiful ruby-orange color complements most seaside settings and summer sunsets.

Serves: 1

Ingredients

  • Ice cubes
  • 1½ ounces Aperol
  • About 1/3 cup prosecco or other sparkling wine
  • Splash of sparkling water
  • Slice of orange

Instructions

Fill a white wineglass or champagne flute with ice.

Pour in the Aperol, followed by the prosecco.

Stir once and finish with a splash of soda water and a slice of orange.
